I have a melee map, but since it's under arcade I assume that means I can do stuff like; keeping wins/loss/disc records of players between loads of the map? Or even other stats like kills? minerals mined? etc?
You will probably have to use banks. With banks you will need variables to temperately access and store the information before it is added to the bank. If you need to know how to use banks click the tutorial link in my signature. There are plenty of tutorials there, and there are a few for banks that are helpful.
See how you need it, for solo wins (each one gets it) or team - each player within the team gets a win, both solo and team mode may be a little complex and may require duplicating some part of the system.

I think I would like to switch it to melee/custom but I am wondering if I will lose the custom loading screen, map info, reviews, etc. And will I lose the ability to keep stats if I do this banking thing?

Is there a way to save and load triggers into a map like how it was in BW? That shit looks really complicated and time consuming.
I don't know how it was in BW but since war3 was more advanced, it is like in war3, Banks are the way.
Banks are created via triggers so it doesn't matter if your map is in Custom or Arcade for that. What I provided is a Library or triggers that can be simply copy+pasted without needing to do from scratch. It just need little adjustments depending on what you need. For example, in what case your opponents will gain a win/loss to run these triggers to add win or loss and save the Bank file. Also will the players be winning solo or team or would it be mixed - these triggers can be adjusted based on that. So how would players win and lose?
Oh, so I can just copy whatever stuff you already created into my map? I would just want it to save each players W/L (how does it handle disc?) for 1v1, 2v2, and FFA. I'm not sure what else the triggers have, I skimmed over a rating system. How does that work?

I think based on what you choose the map will appear there. Custom - your map will be seen in Custom tab of bnet, better refrain as no one plays there, Arcade - where all play. For example Peep Mode/1v1+ Obs are in Arcade and more people see it,
I would suggest the Bank under which section you choose to use 'Handle of player' as it will be unique and won't mess with other plyers' stats. if you will use it for a team as well, best is to use this Team Victory map as it adds the victors to a group where the Win/Loss event run for all within the player group of winners or losers.
Don't know how it handles disconnect as I don't know what event can detect when a player is about to drop - when a player Leaves the map, the events cannot work and update the bank wit ha Loss
There are events like presses some Menu option like Leave/Surrender, etc but I do not remember if that worked for the bank to save with LOSS.
