I'm wanting to have an ability that is identicle to the carriers interceptors but I am just wanting to change the model of the interceptor to a scout and I am having a hard time figuring out how it works. Could someone shed some light on exactly how its pulled off in the data editor?

why not just go into the data editor, open the carrier unit, and look at the abilities, behaviors, and effects link to it. this should definitly get you going in the right direction
Read the Arm Magazine ability entry in the wiki. Basicly the carrier's arm magazine ability allows you to create the interceptor ammo units which are kept in an internal magazine. The carrier's weapon uses a constant Use Magazine effect that launches the interceptors while the scope of the weapon tells the interceptors what to attack.

to change the model of the interceptor to the scout, find the interceptor unit, then look at it's actors (bottom left box) and find the actor that's linked to the unit (and not any of the attacks or w/e), it probably has it's "Art - Model" fields set to interceptor ;) Change those to "Scout"
If Scout doesnt appear on the list, make sure you got campaign depencies turned on!
If you want to keep the attributes of the Interceptor and just change the model, TheAlmaitys way is the easiest.
If you want to change the unit created to the Scout, then go the Carrier and look up its "Carrier - Hangar" ability. In table view, just select "Ability - Info - Unit" and select the first entry. Here you can change everything: Buttons, Requirements and at the bottom, the Unit created.
