Which live stream? Some of them had an echo during parts of them. I believe it was an issue during the very beginning of the mapcraft podcasts. But we fixed it after a few minutes. Is it like that the entire way through? Which recording?

Perhaps you 'checked' your own stream at start and forgot too close it ? Thereby you echo-recorded yourself ?
That, or you might have my problem - my webcam has a built-in microphone that runs alongside my actual microphone. I need to fiddle in the soundmixer and make sure that the right microphone is actually selected rather than the wrong one or, what it would be in your case, both of them.
You probably have either 2 sound input devices (like mozared) or you are listening to your own stream in the background while casting, and the sound is coming back and making an echo. Or it could just be a bad microphone you are using.

When I listen to my recordings I hear this really annyoing echo. Anyway to fix it?

Oh your own livestream? O.o Silly me.
