But, I don't know how to link an actor just to get rid of the sphere. All of my searching leads me to Copying from a unit, but I just simply want to reference a copied unit (that copied unit will have it's model changed to something else) anyone have an easy way to do this?
Going through this tutorial

Gah! Anyone? Can't find this =/
Under the events for the actor have an event Unit Birth that uses a Create action.
Also make sure your actor is linked to a model under the Art: Model field.

I created an actor from scratch, configured the Model to be a crate and gave it a Unit Birth - Create. It's still not linking to my actual Unit.

Link the actual unit in the actor event
Unless your unit is called bogus it will not link. Set the event to refer to your unit.
