You need a Unit type actor, a Model type actor, the ingame SOpAttachOrigin and two SOp (Local Offset) SOp type actors.
You use the first local offset SOp to offset your Unit type actor then under the events of that actor get it to create the Model type actor on actor creation. The Model type actor is then attached using the SOpAttachOrigin SOp to the origin of the unit actor before being offset by 3 in the desired direction using the other local offset SOp.
Read the attachment tutorials by ProzaicMuze, those are clear and simple.

How do i do this? The attachment tutorials are too complicated and are for weapons, which i do not need.

what's confusing me is the ingame SOpAttachOrigin. Where does this come from?

The SOpAttachOrigin is a SOp (Attachment) type actor that attached to the origin hardpoint of the model.
There are tons of example attachment maps out there that are easy to follow. There is even wiki pages on the data types you need.
