AI has infinite Supply. Destroying all supply (supply depots, command centers) doesn't prevent AI from building additional units. (I destroyed all of Red AI's Supply Depots and Command Centers)
This isn't an issue. This is how the StarCraft 2 AI works. It is designed to use "cheats" like infinite supply and resources. It fixes a lot of issues that were in StarCraft 1, like the AI not doing anything after 30+ minutes of game play and even makes the game a bit more difficult.
Yes and no. Although the AI does have unlimited food initially, if you take out most (or all) of their resource depots, the unlimited food should have disabled. I see a small bug where if you take out all the food too quickly, it might not have registered to disable their unlimited food, so next update should fix that.
