This is my first foray into layout files so they're still a little scary to me. I'm ultimately trying to make my own inventory screen loosely based off of Sonny.
Currently I'm trying to increase the size of the item slots from 48x48 (defined in the CommandButtonTemplate from the InventoryPanel). This is what I've got so far (base off an example from Arcane):

Since by then the buttons have been instantiated, future changes on the template will only affect nbew instances. IIRC, you will have to edit by hand each item's size.
