I don't know what causes the flying bug, but the "left and right click UI" is caused by enabling simple command cards in your game options. Testing the map offline won't use your saved options in Bnet so that UI can be enabled by default.
Burrow does not require an upgrade if you added campaign dependencies, because that's how it works in the campaign. To fix that you need to edit all burrow abilities and give them the "Use Burrow" requirement.
You can't select the mineral fields because this is another game option that isn't saved when you test maps offline, open game options and check "neutral and enemy unit selection".
