Btw, we Chinese does't eat Gluten Diabetic food, because we are not sensitive to the Gluten and relatied proteins. In fact, we also eat Gluten ONLY food called "面筋", it tastes like no fat meat if you cook them right.
There is no enough experiments that prove Gluten is danger, after all there are over 2 billions guys eat it thousands years, only if you are sensitive to it.
Gluten is also very cool bond, without it the wheat flour can only be made in to breads, which can't keep enough flexibility.
